Honey-fried Chicken Wings
2 lbs chicken wings, both 1st and 2nd sections
1 cup low sodium soy sauce
1 tablespoon grated fresh ginger
2 tablespoons chopped fresh cilantro
2 cloves garlic, minced
1/2 lemon, juiced
2 tablespoons olive oil
2 tablespoons butter
1/2 cup honey
salt and pepper, to taste
sesame seeds, for garnish
Rinse and dry chicken.
Place wings in shallow dish and pour over the soy sauce, ginger, cilantro, garlic, and lemon juice.
Toss well to coat; marinate, refrigerate for 2 hours.
Remove wings from marinade and pat dry.
Season with salt and pepper.
In a large saute pan over medium to medium-high heat, melt the butter in olive oil.
When the butter stops foaming, add honey and chicken wings and fry until browned on each side, about 5 minutes.
Continue cooking wings, turning them over often to coat them as the glaze reduces.
Cook until the wings are sticky and cooked through.
Garnish with sesame seeds and serve.
DO NOT OVER COOK– the glaze will burn

CHICKEN WINGS
3 lb. chicken wings, cut in 3 parts and discard wing tips
Oil for frying
Flour
Salt and pepper
4 tbsp. butter, melted
3 tbsp. hot sauce
1 tbsp. white vinegar
Ranch dressing
Celery sticks
Wash and pat dry chicken, sprinkle with salt and pepper and lightly coat with flour. Heat oil in frying pan, to medium high heat. Add wings, about a pound at a time, and fry for about 10 minutes stirring and turning occasionally. Repeat with rest of chicken.
SAUCE: Mix melted butter, hot sauce, and vinegar. If you like a hotter sauce, add more hot sauce, if you like a milder sauce, add more butter. Pour over chicken wings. Serve with Ranch dressing and celery sticks.
