Fried Chicken - - Pollo Fritto
INGREDIENTS:
* 1 chicken, quartered
* 2 tablespoons olive oil
* 2 eggs
* The juice of a lemon
* Flour
* Olive oil for frying
* Salt & pepper to taste
PREPARATION:
Place the chicken pieces in a bowl. Mix the 2 tablespoons of olive oil and the lemon juice in a bowl, seasoning them with salt and pepper and beating the mixture well with a fork. Pour the mixture over the chicken pieces, turn them to coat them well on all sides, and let them marinate for about an hour, turning them several times.
When it comes time to cook, heat the oil in a pot. Remove the chicken pieces from the marinade and pat them dry. Beat the eggs in a bowl, seasoning them lightly with salt and pepper. Dredge the chicken pieces in the flour, then dip them in the egg and slip them into the oil. When they are well browned on all sides, remove them from the pot, drain them well, and serve them.

If you dont have a cast iron skillet use your electric skillet. You can sub milk for an egg bath, bathe the chicken in egg real good, then flour, then repheat for a good coating. Fry your dark meat first it will take longer. Then do your white meat. With an electric skillet just dont have the grease to hot and it should not splatter. Good luck!!

Your asking the right person. I love chicken and I hope this will be a good one for you..
4 chicken legs (you can use wings, wingettes, thighs or breast
3 cups of flour
Seasonings, you will need the following or you can add your favorite spices
Seasoning salt to taste
black pepper to taste
dried parsley flakes to taste
lemon pepper to taste
Plastic bag (Glad quarter bags are the best to use)
Whole bottle of Canola Oil
Large Pan or deep fryer
Add oil to the large pan or deep fryer
Add flour and seasonings to bag. Shake well.
Add chicken and shake well
Once your oil has gotten hot, add your chicken. For the deep fryer us the manufacturers instructions on cooking times. For the large pan, allow chicken to cook on one side for atleast fifteen minutes and then turn over for an additional fifteen minutes. Take out when done and there it is.

I pan fry mine - just coat the chicken in a mixture of flour and spices (depending on my mood it might be just salt and pepper or I might add garlic powder, parsley, sage, rosemary, or whatever else is around). Then I place it in about an inch of oil heated to about 325 and COVER (the moisture then gets absorbed by the flour mixture which helps make a great crust). Cook about 7 minutes then turn and cook for about 7 minutes more. Its done when the chicken reaches 160 or the juices run clear. Either electric skillet or deep pan would work, so long as you have a cover. Electric skillet has more precise temp control if you’re not used to cooking with oil, but I use my grandmother’s cast iron skillet - the mass gives good temp uniformity.

always sking the chicken, let it rest in ice water with salt for at least 1/2 hr.
dredge in flour that has salt and pepper already
let it rest another 1/2 hr
use a good pan (iron skillet is good)
get you pan hot then add oil and then chicken to hot oil at about med-high
sear both sides for a min only turn down heat and cover
keep an eye on it and turn not too often though
last 5 mins of cooking uncover so has to crisp up.
