I did that once and you roll the chicken in buttermilk then use store bought bread crumbs. Or buy some sourdough bread let it get old and hard then crumble it. Mmmmmmmm!

Dredge the chicken in seasoned cornstarch, then dip it in whipped egg whites (not yolks) before dipping in seasoned bread crumbs - and then bake - you will not even realize you are eating baked chicken instead of fried!

My mom uses bread crumbs, then whatever spices she wants to add. Then add some canola oil till the bread crumbs sort of clump together. You have to dip the chicken into egg or milk (preferably a mixture of both) to get this coating to stick.
Another thing she does is coat the chicken with her own recipe, then fry the chicken just to brown the outside and then bake it in a baking pan on a rack to get rid of excess grease and finish cooking the chicken.

Oven Fried Parmesan Chicken
INGREDIENTS:
1 clove crushed garlic
1/4 pound butter, melted
1 cup dried bread crumbs
1/3 cup grated Parmesan
cheese
2 tablespoons chopped fresh parsley
1 teaspoon salt
1/8 teaspoon ground black
pepper
1 (4 pound) chicken, cut into
pieces
DIRECTIONS:
1. Preheat oven to 350 degrees F (175 degrees C).
2. In a shallow glass dish or bowl, combine the crushed garlic with the melted butter or margarine. In another small bowl mix together the bread crumbs, cheese, parsley, salt and pepper. Dip chicken pieces into garlic butter, then into crumb mixture to coat.
3. Place coated chicken pieces into a lightly greased 9×13 inch baking dish. Drizzle with remaining garlic butter and bake uncovered in the preheated oven for 1 to 1 1/4 hours, or until chicken is cooked through and juices run clear.

When I was a boy ever so many years ago, Mom oven baked chicken because of Dad’s low fat (because of high cholesterol) diet. She breaded it with cornflakes. It is a big hit at family reunions.

I didn’t know you could fry chicken in the oven. you can bake it though.. that will work VERY well.
and for the crispy part, high temperature (450-500F) for a hour and a half.

My family loves the recipe on the back of the Bisquik box..it is called Oven Fried Chicken. When I do not have the box I use Krusteaz pancake mix with seasonings as a coating and place chicken in a glass baking dish that already has melted butter (margarine) onthe botton. Check it out…its m.m.m.m. good. Once you have tried it then you can modify the seasonings to suit your taste, that includes adding parmesan cheese to the mixture.
