KFC uses deep oil in a pressure cooker.
Of course their coating is secret.
Start with a mixture of flour, salt, & pepper.
Then dip in beaten egg, then corn-meal.
Add whatever spices you prefer:
sage, thyme, paprika, marjoram, allspice, cloves, cumin, etc.

To get chicken like KFC you need a pressure fryer, not just a deep fryer. Unfortunately, it is difficult to find one for home use and I wouldn’t recommend using a pressure cooker. You can brown chicken like pan frying and then pressurize it to finish cooking, but it won’t be the same. Wearever used to make a chicken bucket which was a pressure fryer that you could fill with oil and deep pressure fry in. I had one years ago and it worked great, but they were determined to be unsafe, so you can’t buy them anymore. I did find some on EBAY if you want to risk buying one.
