    I dont think so. I think that it is just deep fried and the ‘juices’ are mostly oil. They have been doing it for a long time also, so they know the correct temperatures & times for cooking, that it doesnt get over cooked.

    One secret is the pressure cooker but I don’t think the home model is designed for use in there.

    It is made in special pressure cookers that use oil. These, I must STRESS are made specifically to cook in oil. The original Colonel invented this system. They are breaded with egg and water, then dipped in flour and those famous spices (which some say is really only black pepper and MSG). You can do the same thing by pan frying and then finishing in the oven. It crisps it up well.

    It’s mostly because it cooks the exterior very quickly and traps the juices inside. It creates a seal around the moisture found in the meat. Putting anything in the oven is drying because it’s heated dry air.

    Original Recipe is cooked in a pressure cooker. The Extra Crispy is cooked in an open fryer same with the chicken strips and popcorn chicken. For the seasoning the ingredients aren’t listed on the packages so employees don’t know exactly what it is. The Original looks just like pepper though mixed in with powdered egg and flour.
