My friend stores the extra flour w/ seasoning in a bowl with a lid and brings it out everytime he makes fried chicken. I thought eewww gross! I worried about the germs and food poisioning since it was left over, but he says since you fry the chicken at such high temps that it gets rid of any food poisioning and so on. Is this true?
BTW no eggs or milk are used. Just chicken germs

If the flour and seasoning mix had been used and the excess stored, then I would think it would definately be contaminated and bacteria is growing. Sure cooking to a certain temperature does kill bacteria, but I think I’d pass this dish over.

You can get by with this as long as you occasionally wash the bowl you do it with and it is stored in the refirgerator or freezer. And the temperatures you cook it at are high enough to kill everything . I want my oil to be 355 degrees.

I’m not sure that I’d trust flour and seasonings that have had raw chicken in them. He may be right about the high temps killing off the bacteria, but why take a chance in the first place?
And that’s also assuming that the food is cooked at a high enough temp for long enough to kill the icky stuff. That may or not be the case, depending on whether you’re deep frying something or pan frying it.
Besides, bacteria can change the taste of things, so I’d want to start off with a fresh batch of coating.

I store mine in a Zip-Lock Bag in the freezer. I have done it for years with no problems.

It is not safe to reuse anything that was exposed to raw chicken. Raw chicken is known for containing germs that lead to food poisoning, they would thrive in a warm container and possibly make someone very sick next time. The mixture should be discarded and the bowls and utensils should be washed very thoroughly in hot soapy water. You are right.

No. Throw the used flour and seasonings away! The only exception to this is when the ingredients are being used in a restaurant and then this is discarded at the end of the day. You can keep the frying oil (strained) if you keep it refrigerated, but don’t keep it for too long or it will get rancid.

Its not the bacteria that cause the food poisoning anyway. Its the toxins that they make.. You cant kill the toxin, its there and its harmful.

The bacteria that grow in in this mixture expell waste and chemicals as they consume and grow. While frying the chicken may kill the bacteria, it doesn’t protect you from what they leave behind. You are right to worry about this.

I think you’re saying that he dips raw chicken into the dry batter mix then stores for reuse at a later date.
This is a bad idea. It can promote growth of bad bacteria that could easily spread when the mix is used later. However, he’s probably right about frying the chicken, as long as the temp is high enough, it probably won’t hurt you. But it might eventually taste ransid.
My concern is that it promote really bad bacteria that could cross contaminate to counter tops, hands, utensils, etc. I don’t think the risk is worth it.
If he absolutly insists on storing the mix between uses, recommend that he stores the mix in the FREEZER between uses. Since it’s dry, he won’t have to wait for it to thaw and will greatly reduce bacteria growth. Nonetheless, flour and corn meal are pretty cheap, right? Why risk ruining an entire chicken or your health in an attempt to save 38¢ worth mix? Just trash it and make fresh next time.

I don’t save it. Chicken already been on the flour and it can make you sick if you reuse it.
Dump it out…Make a fresh one.
