KFC and All Fried Chicken

I ordered some fried chicken from a restaurant. And as I was biting into it, I noticed it was brown. Like dried blood or something. What is it and was my chicken undercooked? What causes chicken to be like that? Is it safe to eat or should I avoid that restaurant altogether?

I’ve been to Popeyes, Ezells, and the Wellington. All had very good fried chicken in my taste, and were good in taste and value (especially Popeyes and Ezells). I was told by some that Kingfish by far has the best fried chicken in the Seattle area. I haven’t been there, anyone else agree…any other suggested places I should try?
