KFC and All Fried Chicken

My son doesnt like vegetables. He used to eat only spaghetti until he turned yellow (hypercarotenemia) so now he’s into scrambled eggs with fresh milk and quickmelt cheese on top. He likes fried chicken every now and then.
I prepare and cook the chicken myself. Season it with salt, pepper, vinegar and cover it with all purpose flour and cornstarch? I use canola oil at home.
