True Southern Style Fried Chicken?

Ok, I’ve received countless of methods for this iconic recipe, some boiled their chickens in milk, some deep fried it directly (without boiling it first) just want to know, what’s the true blue way of cooking southern style fried chicken? A recipe from the deep south please?
INGREDIENTS
1 cup shortening
2 cups all-purpose flour
1 teaspoon salt
1 teaspoon ground black pepper
1 (2 to 3 pound) whole chicken, cut into pieces
DIRECTIONS
Heat the shortening in a large, cast iron skillet over medium-high heat.
In a brown paper lunch bag, combine the flour, salt, and pepper. Shake two chicken pieces in the bag to coat, and place them in the skillet. Repeat until all of the chicken is coated and in the skillet.
Fry the chicken over medium-high heat until all of the pieces have been browned on both sides. Turn the heat to medium-low, cover, and cook for 25 minutes. Remove the lid, and increase heat to medium-high. Continue frying until chicken pieces are a deep golden brown, and the juices run clear.

Get sage n onion stuffing,paprika,salt,sum veg or chicken stock cubes,pepper,combine all things together with 1 cup of plain flour! N grind evrytn into a powder!add 1 tablespn oil,enuf water to make a thin paste!let this mixture stane 4 abt 30mins than marinade ur chicken in it,ova nite d best but u cn use it immed deep fry wid the lid on!when cooked fry on hi heat 2make crispy!yum.

I was born and raised in the south and this is how my grandmother always made fried chicken.
1 chicken (cut up legs, thighs, breats, wings)
Buttermilk
Flour
Salt and Pepper
Oil for frying
Place chicken in a deep bowl and cover with buttemilk. Let soak in the buttermilk at least an hour. Place large iron skillet on stove and heat oil to 350 degrees. In a shallow dish mix flour, salt and pepper. In another dish place more buttermilk. Take each chicken piece, dredge in flour, dip into buttermilk, dredge again the the flour…shake off excess and place in heated oil. Repeat with remaining chicken. Fry until golden brown, thrying to turn only once. Reduce the heat to avoid burning if necessary. Hope you enjoy!
