I lived in Brisbane for over 40 years.
I can remember the arrival of all the yank fast food outlets in the late 60s-early 70s.
There was no such place that I can recall (and it would have been very well known particularly amongst students if it existed!).
I also doubt that any KFC would have been on the Brisbane River. All fast food joints locate themselves in high-traffic areas.

Would KFC even open up an all you can eat restaurant? What would you eat, what would they serve? Just chicken and chips?

All you can eat KFC’s came out in the USA in 1992. Apparently there were a few in Australia.
I wasn’t here then so I can’t help with that specific one.
