What do you think of this recipe for fried chicken?

I am a health freak and I try to adapt regular foods to be healthy…I just got the idea to make fried chicken with whole wheat flour, seasoning and olive oil what do you think of that recipe?
do you mean dredging the chicken in flour and then frying it in olive oil? i think that sounds great! but be sure to put a pinch of baking soda in the flour, it makes the crust puff up (extra crispy!)
if you intend to bake the chicken, then grind up some whole wheat bread and after dipping the chicken in some egg (or buttermilk, which is very good for you) dip it in the bread crumbs.

I have even seen some folks use soy flour. (I have not tried it yet) I am sure whole wheat will work fine. 100% Whole wheat presents some problems when making yeast bread because yeast feed off of the simple carbs. You should be fine to coat chicken
If you are concerned about the strong taste of regular olive oil , use light olive oil. It is more neutral in flavor and just as healthy.

Dont want to burst your bubble, but olive oil is unhealthy once its cooked, I saw that on Oprah, its true, olive oil becomes unhealthy once it is heated. maybe try breading it and the baking it instead of frying?

Ive tried to substitute whole wheat flour for a couple fried recipes, and they just werent very good. Even for just dusting the meat before the egg wash and breadcrumbs. If you truly want to eat a fried chicken substitute or make it healthier, I have a recipe you can try. It significantly reduces sodium, fat, and calories.
Dip the chicken in a mixture of dijon mustard and egg (or egg substitute), then the breading mixture of parmesan cheese, oregano, red pepper, and crushed corn flakes. Spray lightly with some non-stick spray such as pam, and bake in the oven at 400 for about 30-45 min until done.
